Coconut Pumpkin-Swirl Bark (Paleo, vegan)

It’s December!!! Let the festivities begin. I absolutely love Christmas – the smells of cinnamon, pine trees, and cookies baking, singing carols at church, and all the beautiful snow we get LOTS of in Canada! It’s a very cold time – by the way, secretly, Canadians think it’s hilarious when Californians say it’s freezing down there – but I absolutely love snow and all the fun that comes along with it! I have fond memories of when I was younger and could play in the snow for hours with my little sister. We’d make snowpeople and snow angels and collect snow to make maple taffy, and then we’d come in and drink hot chocolate and read a whole stack of books to each other, cozied up by the fire.

Raw Peach and Fig Tarts!!! Can I get a cheer or at least a double-thumbs-up?! Guess what, friends: I’m featured on my lovely friend Sadie’s blog… and that’s where you can find the recipe for these tarts! I’m sure you’ve heard on GoodiesAgainstTheGrain.com, the Paleo recipe site created by Sadie, a fellow teenage blogger. I’m honoured to be posting this recipe on her amazing website!

When I think of Sadie, I think fun and cheery, just like these tarts. I also wanted to make a treat for her site (hence its name!). Here are some sneak-peak photos, but for the recipe, head on over to GoodiesAgainstTheGrain.com and check it out!

Cookie Dough Nice Cream (Paleo, vegan, fruit-sweetened, dairy + gluten-free)

Yum. Yum. YUM!

I’m still in a banana-induced state of yum after making this Cookie Dough Nice Cream. Wow. I think the pictures speak for themselves – look at that creamy banana goodness laced with gluten-free cookie dough made with almond flour (I used Bob’s Red Mill)! My little sister (who is very anti-real food) and I couldn’t stop eating it. This is definitely a sweet treat. Though bananas are fruits and considered quite healthy, they can still raise your blood sugar and contain a lot of fructose. Therefore, this is best enjoyed for special occasions or when you need to treat yo self. ๐Ÿ˜‰

Honeydew-Coconut Sorbet

DSC_0107 (1)

Ahhh, summer. Time for fruit and coconut galore! And time to make this thick and creamy, yet refreshing, Honeydew-Coconut Sorbet. Only two ingredients but an explosion of flavour!

I have a undeniable sense of nostalgia for cold treats when summertime rolls around. I have so many memories of enjoying Popsicles and frozen lemonade outside with my friends and my sister as little kids. And I used to love Frosters. They’re basically artificially flavoured + coloured slushies. Don’t even ask me why I preferred those to actual fruit smoothies. I’m not really sure anymore ๐Ÿ˜‰

Peach Blueberry Two-Tone Smoothie

As you may know, I am in high school. And apparently high schoolers eat a lot. And I am no exception! I am constantly thinking about cooking and especially eating. But not just any food: fresh, healthy food, i.e. lots of veggies and fruits! After school I always have a snack! Now that it’s summer, smoothies are often on the menu. My all-time favourite smoothie is definitely chocolate-blueberry-PB, which I will have to post sometime. But sometimes light + fruity is in order, and these Peach Blueberry Two-Tone Smoothies fit the bill! I’ll be honest: this was kind of messy to make. I finished the peach part and before I finished the blueberry, the peach was melting all over the place! Oops. Also, my blender was having issues and was drizzling blueberry smoothie everywhere. Oops again.
